No Bake Energy Bites

I started making these bites last year when we were traveling to various BMX state qualifier events.

I quickly became known as the lady with the peanut butter things!  Everyone loved them and I had to start making double and triple batches before heading to events.

These energy bites were originally featured on my blog It Is a Keeper.  You can find the recipe here.  I adapted the recipe a little bit to add more protein and help with hydration.

What’s In No Bake Energy Bites

This recipe is very easy to make and it doesn’t take long at all to whip up a few dozen.  It’s a mixture of peanut butter, honey, coconut, chocolate and vanilla.  Then I add some vanilla protein powder for added protein, chia seeds to help with hydration and flax (because it’s good for you).

How to Make No Bake Energy Bites

It’s really quite simple to make these little bites.  Simply mix all of the ingredients in a large bowl (I love this one) with a rubber spatula.  When everything is combined, use a scoop, like this one, to portion the mixture into bite sized balls.

I line a rimmed baking sheet with a silicone baking mat.  This way the energy bites won’t stick and are easy to package into a resealable container.

I love that you can make double and triple batches of these very easily.  I like to make big batches and keep them in the fridge so we always have some on hand.
